  • 8 ounces (225 g) white or cremini mushrooms, sliced
  • 1 medium yellow onion, finely chopped
  • 2 garlic cloves, minced
  • 2 tablespoons (30 g) unsalted butter
  • 2 tablespoons (16 g) all-purpose flour (or 1 tablespoon cornstarch for gluten-free)
  • 1 ½ cups (360 ml) low sodium beef broth
  • ¾ cup (180 ml) full-fat sour cream
  • 1 teaspoon Dijon mustard
  • 1 tablespoon Worcestershire sauce
  • Salt and freshly ground black pepper, to taste
  • Fresh parsley, chopped (optional, for garnish)
  • Egg noodles or preferred side (mashed potatoes or rice)

Instructions

  1. Prepare your ingredients: slice mushrooms, chop onions, and mince garlic.
  2. Heat 1 tablespoon butter over medium-high heat in a large skillet. Add ground hamburger meat, breaking it apart. Cook about 7 minutes until browned with no pink spots. Season lightly with salt and pepper. Remove meat with a slotted spoon and set aside, leaving fat in the pan.
  3. Add remaining butter to the skillet. Toss in mushrooms and onions with a pinch of salt. Cook about 5 minutes, stirring often, until mushrooms release moisture and start to brown, and onions turn translucent. Add garlic in the last minute to avoid burning.
  4. Sprinkle flour over the mushroom-onion mixture and stir constantly to coat evenly. Cook 1-2 minutes until slightly golden and nutty smelling.
  5. Slowly pour in beef broth while stirring to prevent lumps. Add Worcestershire sauce and Dijon mustard. Bring to a simmer and cook about 5 minutes until slightly thickened. Add more broth if too thick.
  6. Return browned hamburger to skillet. Stir well to coat in sauce. Cook on low heat for 2 minutes to combine flavors.
  7. Remove skillet from heat and gently stir in sour cream. Taste and adjust salt and pepper as needed.
  8. Serve immediately over cooked egg noodles or your chosen side. Garnish with fresh parsley if desired.

Remove skillet from heat before stirring in sour cream to prevent curdling. If sauce is too thick after adding sour cream, add a splash of broth or water to adjust consistency.
