Quick Juicy Garlic Butter Steak Bites

A fast and easy recipe for tender, juicy steak bites seared to perfection and coated in a rich garlic butter sauce, perfect for weeknight dinners or appetizers.

  • 1 pound sirloin or ribeye steak, cut into 1-inch cubes
  • 4 cloves garlic, minced
  • 3 tablespoons unsalted butter, softened
  • 2 tablespoons extra virgin olive oil
  • 2 tablespoons fresh parsley, chopped
  • Kosher salt, to taste
  • Freshly ground black pepper, to taste
  • Optional: pinch of smoked paprika or red pepper flakes

Instructions

  1. Pat the steak cubes dry with paper towels to remove excess moisture. Season generously with kosher salt and freshly ground black pepper. Let the steak sit at room temperature for about 10 minutes.
  2. In a small bowl, combine softened butter and minced garlic. Mix well and set aside.
  3. Place a cast iron or heavy skillet over medium-high heat. Add the olive oil and heat until shimmering but not smoking, about 2 minutes.
  4. Add the steak cubes in a single layer (work in batches if needed to avoid overcrowding). Let them sear undisturbed for about 2-3 minutes until a golden-brown crust forms, then flip and cook another 2 minutes.
  5. Lower the heat to medium. Push the steak to one side of the pan, add the garlic butter mixture, and let it melt gently. Tilt the pan slightly and spoon the melted garlic butter over the steak bites repeatedly for about 1 minute.
  6. Turn off the heat and sprinkle chopped fresh parsley over the steak bites. Toss gently to combine.
  7. Transfer the steak bites to a warm plate and serve immediately.

Notes

Pat steak dry before cooking to ensure a good sear. Avoid overcrowding the pan to prevent steaming. Add garlic butter towards the end to avoid burning the garlic. Let steak rest 2-3 minutes if prepping ahead. Reheat leftovers gently on stovetop to keep juicy.
