  • 3 large fresh lemons (for about 3/4 cup fresh lemon juice)
  • 1 cup granulated sugar (about 200 grams)
  • 1 cup water (240 ml) for simple syrup
  • 4 cups sparkling water or club soda (1 liter), chilled
  • Ice cubes
  • Fresh mint leaves (optional, for garnish)

Instructions

  1. Make the simple syrup by combining 1 cup granulated sugar and 1 cup water in a medium saucepan. Heat over medium, stirring occasionally until sugar is fully dissolved, about 5 minutes. Remove from heat and let cool to room temperature.
  2. Prepare the raspberry puree by placing 2 cups fresh raspberries in a blender or food processor. Pulse until smooth but still a bit pulpy. For a seedless punch, strain the puree through a fine mesh sieve into a bowl.
  3. Juice the lemons using a citrus juicer to yield about 3/4 cup fresh lemon juice, removing any seeds.
  4. In a punch bowl or large mixing bowl, stir together the cooled simple syrup, raspberry puree, and lemon juice until well combined.
  5. Just before serving, pour in 4 cups chilled sparkling water or club soda. Gently stir to mix without losing fizz.
  6. Serve over ice cubes and garnish with fresh mint leaves if desired.

Notes

Let the simple syrup cool completely before mixing to preserve fresh fruit flavors. Blend raspberries just enough to keep a pulpy texture and vibrant color. Stir sparkling water gently to maintain fizz. Chill glasses before serving for best experience. Adjust sugar to taste depending on lemon tartness.
