  • 3/4 cup (150g) light brown sugar, packed
  • 1/4 cup (50g) granulated sugar
  • 2 large eggs, room temperature
  • 2 teaspoons pure vanilla extract
  • 1 1/2 cups (270g) semi-sweet chocolate chips
  • 1215 soft caramel candies, chopped into small chunks

Instructions

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper or silicone mats.
  2. In a large bowl, cream 3/4 cup softened unsalted butter with 3/4 cup light brown sugar and 1/4 cup granulated sugar until pale and fluffy, about 3-4 minutes with an electric mixer.
  3. Add 2 large room-temperature eggs and 2 teaspoons pure vanilla extract to the butter-sugar mixture. Beat until fully combined and smooth.
  4. In a separate bowl, whisk together 2 1/4 cups all-purpose flour, 1 teaspoon baking soda, and 1/2 teaspoon salt.
  5. Gradually add the dry ingredients to the wet mixture, folding gently until just combined. Avoid overmixing to keep the dough tender.
  6. Fold in 1 1/2 cups chocolate chips and the chopped caramel pieces evenly throughout the dough.
  7. Use a 2-tablespoon cookie scoop or spoon to place generous mounds about 2 inches apart on the prepared baking sheets.
  8. Lightly sprinkle flaky sea salt on top of each cookie.
  9. Bake for 10-12 minutes, watching closely. The edges should be golden while the centers remain soft and slightly underbaked.
  10. Cool the cookies on the baking sheet for 5 minutes before transferring to a cooling rack to set.

Notes

Chop caramel pieces small to prevent excessive oozing. Chill dough for 15-20 minutes before baking to reduce caramel leakage. Remove cookies when edges are golden but centers still look soft for perfect gooey centers. Use flaky sea salt for topping to add crunch and balance sweetness.
