  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 small onion, finely chopped
  • 2 cups (480 ml) Alfredo sauce (store-bought or homemade)
  • ½ cup (120 ml) milk (whole milk preferred)
  • 12 oz (340 g) pasta (fettuccine or penne)
  • 1 cup (100 g) shredded mozzarella cheese
  • ½ cup (50 g) shredded cheddar cheese
  • Salt and black pepper to taste
  • 1 tsp dried oregano
  • ¼ tsp red pepper flakes (optional)
  • Fresh parsley for garnish

Instructions

  1. Bring a large pot of salted water to a boil. Add 12 oz (340 g) of fettuccine or penne pasta and cook according to package instructions until al dente (usually 10-12 minutes). Drain and set aside, reserving ½ cup of pasta water.
  2. While pasta cooks, heat 2 tbsp olive oil in a large skillet over medium-high heat. Add 1 lb (450 g) of ground beef, breaking it apart with a wooden spoon. Cook until browned and no longer pink, about 6-8 minutes. Drain excess fat if necessary.
  3. Reduce heat to medium. Add 1 small chopped onion and 3 minced garlic cloves to the beef. Cook, stirring occasionally, until onion is translucent and fragrant, about 3-4 minutes. Season with 1 tsp dried oregano, salt, and pepper to taste.
  4. Pour 2 cups (480 ml) Alfredo sauce into the skillet with the beef mixture. Stir gently to combine. Add ½ cup (120 ml) milk to thin the sauce slightly if it feels too thick. Cook for 3-5 minutes, letting the flavors meld and the sauce warm through. If the sauce gets too thick, add reserved pasta water a tablespoon at a time.
  5. Add the drained pasta directly into the skillet. Toss everything together so the pasta is well coated. Sprinkle 1 cup (100 g) shredded mozzarella and ½ cup (50 g) shredded cheddar over the top. Gently stir until cheeses melt into the sauce, creating that irresistibly creamy, cheeseburger-inspired texture.
  6. Taste and adjust seasoning with salt, pepper, and optional red pepper flakes (¼ tsp) for a little heat. Sprinkle fresh parsley over the top for a pop of color.
  7. Spoon into bowls or onto plates and serve immediately while hot.

Notes

If sauce thickens too much, add more milk or reserved pasta water to loosen. Brown beef slowly for better flavor and drain excess fat to avoid greasy sauce. Add cheese off heat or on low to prevent clumping. Reserve pasta water to adjust sauce consistency. Can substitute ground turkey or plant-based beef for dietary needs.
