  • 1/4 cup (85g) honey
  • 2 tablespoons (30g) Dijon mustard
  • 2 tablespoons (25g) brown sugar
  • 1 tablespoon (15ml) apple cider vinegar
  • 1 teaspoon (2g) smoked paprika
  • 1/2 teaspoon (1g) garlic powder
  • Freshly cracked black pepper to taste
  • 1 tablespoon (15ml or 14g) olive oil or butter
  • Optional: chopped fresh parsley or thyme for garnish
  • Optional: mustard seeds for glaze

Instructions

  1. In a small mixing bowl, whisk together honey, Dijon mustard, brown sugar, apple cider vinegar, smoked paprika, garlic powder, and freshly cracked black pepper. Set aside.
  2. Heat a cast iron or non-stick skillet over medium heat and add olive oil or butter. Warm until shimmering but not smoking, about 2 minutes.
  3. Add ham steaks to the pan and cook for 3-4 minutes per side until browned and edges are slightly crisp. Flip carefully with tongs.
  4. Brush or spoon the glaze generously over each ham steak.
  5. Reduce heat to medium-low and continue cooking for another 2-3 minutes per side, basting with extra glaze. The glaze should bubble and caramelize to a deep amber color without burning.
  6. Once the glaze is sticky and caramelized and ham is heated through (internal temperature around 140°F/60°C), remove from heat.
  7. Let ham steaks rest for 2 minutes to allow glaze to set. Garnish with fresh herbs if desired and serve warm.

Use thick-cut ham steaks for best texture. Control heat carefully during caramelization to avoid burning the glaze. Rest ham steaks before serving to let glaze set. For dairy-free, use olive oil instead of butter. Leftovers can be reheated gently with added moisture to keep glaze sticky.
