  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 6 tablespoons (85 grams) unsalted butter, cold and cubed
  • 1 cup (100 grams) sharp Irish cheddar cheese, shredded
  • 3 tablespoons fresh chives, finely chopped
  • 3/4 cup (180 ml) whole milk
  • 1 large egg, beaten

Instructions

  1. Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. In a large bowl, whisk together the flour, baking powder, and salt until evenly combined.
  3. Add the cold, cubed butter to the dry ingredients. Cut the butter into the flour using a pastry cutter or two knives until the mixture resembles coarse crumbs with some pea-sized pieces.
  4. Fold in the shredded Irish cheddar and chopped fresh chives evenly.
  5. In a separate small bowl, whisk together the milk and beaten egg.
  6. Gradually pour the wet mixture into the dry ingredients. Stir gently with a wooden spoon or spatula until just combined; the dough should be slightly sticky but hold together. Avoid overmixing.
  7. Turn the dough onto a lightly floured surface and gently pat it into an 8-inch (20 cm) diameter circle about 1 inch (2.5 cm) thick.
  8. Cut the dough circle into 8 equal wedges using a sharp knife or bench scraper. Transfer the wedges to the prepared baking sheet, spacing them about 2 inches (5 cm) apart.
  9. Lightly brush the tops of the scones with a bit of milk to encourage browning.
  10. Bake for 15-18 minutes until golden brown on top and cooked through. They should sound hollow when tapped on the bottom.
  11. Let the scones cool on a wire rack for about 5 minutes before serving warm.
