  • 1 block extra-firm tofu, pressed and cubed
  • 2 cups mushrooms (cremini, shiitake, or button), sliced
  • 23 tablespoons vegetable oil (peanut or canola oil)
  • 3 tablespoons soy sauce (low-sodium optional)
  • 1 teaspoon sesame oil
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 2 cups vegetables (broccoli florets, bell peppers, snap peas, or carrots)
  • 2 tablespoons cornstarch
  • 2 tablespoons water
  • Optional toppings: sesame seeds, green onions, lime

Instructions

  1. Press the tofu: Remove the tofu from its packaging and wrap it in a clean kitchen towel. Place a heavy object, like a skillet or a few cans, on top and let it sit for 15 minutes to remove excess moisture.
  2. Prepare the tofu: Cut the pressed tofu into 1-inch cubes. In a mixing bowl, toss the tofu cubes with 2 tablespoons of cornstarch until evenly coated.
  3. Heat the skillet: In a large skillet or wok, heat 2 tablespoons of vegetable oil over medium-high heat. Once hot, add the tofu cubes in a single layer. Cook for 3-4 minutes on each side until golden brown and crispy. Remove from the pan and set aside.
  4. Sauté the aromatics: In the same skillet, add another tablespoon of oil if needed. Add the minced garlic and grated ginger, stirring for about 30 seconds until fragrant.
  5. Cook the mushrooms: Add the sliced mushrooms to the skillet. Sauté for 5-7 minutes until they release their moisture and become golden brown.
  6. Add the vegetables: Toss in your choice of vegetables (e.g., broccoli, bell peppers, snap peas). Stir-fry for 3-5 minutes until they are tender yet crisp.
  7. Combine and season: Return the crispy tofu to the skillet. Add 3 tablespoons of soy sauce, 1 teaspoon of sesame oil, and 2 tablespoons of water. Stir everything together until the sauce coats the tofu and vegetables evenly. Cook for another 2 minutes.
  8. Serve and enjoy: Transfer the stir-fry to a serving plate, garnish with sesame seeds and chopped green onions, and serve immediately over steamed rice or noodles.
