Instructions

  1. Preheat your oven to 400Β°F (200Β°C). Line a large baking sheet with parchment paper or a silicone baking mat to prevent sticking.
  2. In a large mixing bowl, combine the green beans and butternut squash. Drizzle with 3 tablespoons of olive oil and toss to coat evenly.
  3. Sprinkle the vegetables with garlic powder, paprika, salt, and pepper. If using optional seasonings like red pepper flakes or Parmesan cheese, add them now. Toss again to distribute the spices.
  4. Spread the vegetables out onto the prepared baking sheet in a single layer. Avoid overcrowding to ensure even roasting; use two baking sheets if needed.
  5. Roast in the preheated oven for 20 minutes. After 20 minutes, use tongs or a spatula to flip the vegetables for even browning.
  6. Continue roasting for another 10-15 minutes, or until the butternut squash is tender and slightly caramelized, and the green beans are crisp-tender with golden spots.
  7. Remove from the oven and let the vegetables cool for a couple of minutes. Taste and adjust seasoning if needed. Serve warm and enjoy!
