Savory Rosemary Apple Cider Chicken

A comforting and flavorful dish featuring tender chicken thighs infused with the earthiness of rosemary and the tangy sweetness of apple cider. Perfect for cozy dinners or elegant holiday meals.

  • Bone-in chicken thighs (skin-on)
  • 2 tablespoons olive oil
  • 1 cup apple cider
  • Fresh rosemary (a few sprigs)
  • 2 cloves garlic, minced or thinly sliced
  • 2 shallots, thinly sliced
  • 1 cup chicken broth
  • 1 tablespoon butter
  • Salt and pepper to taste

Instructions

  1. Pat chicken thighs dry with paper towels to ensure crispy skin during cooking.
  2. Season chicken generously with salt and pepper on both sides.
  3. Heat 2 tablespoons of olive oil in a large cast iron skillet over medium-high heat. Place chicken thighs skin-side down and sear for 5-7 minutes until golden brown and crispy. Flip and sear the other side for 3-5 minutes. Remove chicken from skillet and set aside.
  4. Reduce heat to medium and add shallots and garlic to the skillet. SautΓ© for 2-3 minutes until fragrant and softened, stirring occasionally.
  5. Deglaze the pan by pouring in 1 cup of apple cider. Scrape up any browned bits from the bottom of the skillet.
  6. Add 1 cup of chicken broth and a few sprigs of fresh rosemary to the skillet. Bring the mixture to a gentle simmer.
  7. Return the chicken thighs to the skillet, skin-side up. Cover with a lid or foil and simmer for 20-25 minutes, or until the chicken is cooked through (internal temperature should reach 165Β°F/74Β°C).
  8. Remove the lid and let the sauce reduce slightly for an additional 5 minutes. Stir in 1 tablespoon of butter for a silky texture.
  9. Serve the chicken hot with the sauce spooned generously over the top. Garnish with additional rosemary if desired.
