  • 1 lb (450 g) ground beef (80/20 for juiciness)
  • ½ cup (120 g) cottage cheese, small-curd
  • ½ cup (60 g) breadcrumbs (plain or seasoned)
  • 1 large egg, room temperature
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tsp Worcestershire sauce
  • ½ tsp salt
  • ½ tsp black pepper, freshly ground
  • ½ tsp dried thyme
  • 2 tbsp unsalted butter
  • 2 tbsp all-purpose flour (or gluten-free flour)
  • 2 cups (480 ml) beef broth (low sodium)
  • 1 tbsp soy sauce (or tamari for gluten-free)
  • 1 tsp Dijon mustard (optional)
  • Salt and pepper to taste
  • 1 tbsp oil or butter (for browning patties)

Instructions

  1. In a large mixing bowl, combine ground beef, cottage cheese, breadcrumbs, egg, finely chopped onion, minced garlic, Worcestershire sauce, salt, black pepper, and dried thyme. Mix gently until just combined.
  2. Divide the mixture into 4 equal portions and shape each into oval patties about ¾ inch thick. Place on a plate, cover with plastic wrap, and refrigerate for 10 minutes.
  3. Heat 1 tbsp oil or butter in a large skillet over medium-high heat. Brown patties for 4-5 minutes per side until golden but not fully cooked. Remove patties and set aside.
  4. In the same skillet, reduce heat to medium and melt 2 tbsp unsalted butter. Whisk in 2 tbsp flour and cook for 1-2 minutes to form a roux.
  5. Slowly whisk in 2 cups beef broth, soy sauce, and Dijon mustard. Stir constantly until gravy thickens, about 3-5 minutes.
  6. Return patties to skillet, spoon gravy over them, cover, and simmer on low heat for 10-12 minutes until patties reach an internal temperature of 160°F (71°C).
  7. Taste gravy and adjust salt and pepper as needed. Serve hot with extra gravy spooned over the patties.

Notes

Do not overmix the meat to keep patties tender. Let patties rest in the fridge before cooking to help them hold shape. If gravy thickens too much, whisk in a splash of beef broth or water. For extra flavor, add a splash of red wine to the gravy when whisking in broth. Use gluten-free flour and broth for a gluten-free version. Substitute cottage cheese with mashed silken tofu for dairy-free option.
