  • 4 cups day-old bread, cubed and slightly dried out (French bread or sourdough recommended)
  • 1/2 cup unsalted butter, melted
  • 1 yellow onion, finely chopped
  • 2 stalks celery, diced
  • 2 cloves garlic, minced
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon fresh sage, chopped
  • 1 tablespoon fresh thyme, chopped
  • 2 large eggs, lightly beaten
  • 1 cup chicken broth (or vegetable broth for vegetarian version)
  • Salt and pepper to taste
  • Optional add-ins: cooked sausage crumbles, dried cranberries, or chopped nuts

Instructions

  1. Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. Melt butter in a skillet over medium heat. Add chopped onion, celery, and garlic, cooking until softened and fragrant, about 5 minutes.
  3. Place bread cubes in a large mixing bowl. If they’re not dry enough, toast them in the oven for 5 minutes to remove excess moisture.
  4. Add sautéed vegetables, fresh herbs, salt, and pepper to the bread cubes. Pour in chicken broth and lightly beaten eggs, stirring until evenly combined. If the mixture feels too wet, add a few more bread cubes.
  5. Use a cookie scoop or your hands to shape the mixture into golf ball-sized portions. Place them on the prepared baking sheet, leaving a little space between each.
  6. Bake for 20-25 minutes, or until the stuffing balls are golden brown and slightly crisp on the outside.
  7. Let the stuffing balls cool for 5 minutes before serving. They’ll firm up a bit as they cool.
