  • 2 cups beef broth (low-sodium recommended)
  • 1/2 cup red wine (optional, can substitute with extra broth)
  • 2 tablespoons tomato paste
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and freshly ground black pepper to taste
  • 2 tablespoons olive oil (for searing, optional but recommended)

Instructions

  1. Peel and chop carrots, potatoes, onion, and celery into large chunks. Mince garlic cloves. This should take about 10-15 minutes.
  2. Pat the beef chuck roast dry with paper towels. Season generously on all sides with salt and freshly ground black pepper.
  3. Heat 2 tablespoons olive oil in a large skillet over medium-high heat. Sear the roast 4-5 minutes per side until browned. Do not overcrowd the pan; brown in batches if needed.
  4. Place the chopped carrots, potatoes, onion, celery, and minced garlic in the bottom of the slow cooker.
  5. In a bowl, whisk together beef broth, red wine (if using), tomato paste, Worcestershire sauce, dried thyme, and dried rosemary. Pour this mixture over the veggies in the slow cooker.
  6. Set the seared beef chuck roast on top of the veggie bed. Spoon some of the liquid over the top to keep it moist.
  7. Cover and cook on low for 8-9 hours, or on high for 4-5 hours, until beef is fork-tender and veggies are soft but not mushy.
  8. Test the roast with a fork; it should pull apart easily. If not tender enough, cook an additional 30-60 minutes and check again.
  9. Remove the roast and veggies to a serving platter. Let the roast rest for 10 minutes before slicing.
  10. For thicker gravy, skim some cooking liquid into a saucepan, bring to a simmer, and reduce slightly.
