  • 1/2 cup peanut butter (creamy or crunchy)
  • 1/2 cup unsalted butter, softened
  • 1/2 cup brown sugar
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 and 1/4 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup semi-sweet or milk chocolate chips

Instructions

  1. Preheat your oven to 350Β°F (175Β°C). Line two baking sheets with parchment paper or lightly grease them.
  2. In a large mixing bowl, combine 1/2 cup unsalted butter and 1/2 cup peanut butter. Use a hand mixer or stand mixer to cream them together until smooth and fluffy, about 2 minutes.
  3. Add 1/2 cup brown sugar and 1/4 cup granulated sugar, and mix until well combined.
  4. Mix in 1 large egg, 1 teaspoon vanilla extract, and 2 mashed ripe bananas. Stir until the mixture is smooth and creamy.
  5. In a separate bowl, whisk together 1 and 1/4 cups all-purpose flour, 1/2 teaspoon baking soda, and 1/4 teaspoon salt.
  6. Gradually add the dry ingredients to the wet ingredients, mixing just until combined. Be careful not to overmix, as this can make the cookies tough.
  7. Fold in 1 cup of chocolate chips using a spatula or wooden spoon.
  8. Using a cookie scoop or tablespoon, drop rounded spoonfuls of dough onto the prepared baking sheets, spacing them evenly. Lightly flatten each cookie for a uniform shape.
  9. Bake in the preheated oven for 10-12 minutes, or until the edges are golden brown but the centers are still soft.
