  • 1 French baguette, sliced into 1/2-inch rounds (about 24 slices)
  • 2 tablespoons olive oil (for brushing)
  • Pinch of sea salt (for sprinkling)
  • 6 ounces feta cheese, crumbled
  • 4 ounces cream cheese, softened
  • 1 tablespoon lemon juice
  • 1/4 teaspoon freshly ground black pepper
  • 1/2 teaspoon honey (optional)
  • 6 slices thick-cut bacon, cooked and crumbled
  • 1/3 cup hot honey (store-bought or homemade)
  • 1/4 teaspoon crushed red pepper flakes (optional)
  • 1 tablespoon fresh parsley, chopped

Instructions

  1. Preheat oven to 400°F (200°C). Arrange baguette slices on a parchment-lined baking sheet. Brush each slice lightly with olive oil and sprinkle with sea salt. Bake for 8-10 minutes, flipping halfway, until golden and crisp.
  2. While bread is toasting, cook bacon in a skillet over medium heat until crispy, about 6-8 minutes. Transfer to a paper towel-lined plate and let cool before crumbling. Alternatively, bake bacon at 400°F for 12-15 minutes on a wire rack over a baking sheet.
  3. In a food processor, combine feta cheese, cream cheese, lemon juice, black pepper, and optional honey. Pulse until ultra-smooth and creamy, scraping down sides as needed (about 2 minutes). If too thick, add 1-2 tablespoons milk or water.
  4. Spread a generous tablespoon of whipped feta onto each toasted baguette slice. Top with crumbled bacon. Drizzle hot honey over each crostini (about 1/2 teaspoon per piece). Sprinkle with crushed red pepper flakes if desired.
  5. Finish with fresh parsley. Arrange crostini on a serving platter or board and serve immediately.

Notes

For vegetarian, omit bacon or use coconut bacon. For gluten-free, use GF baguette. Make whipped feta and bacon ahead, but assemble crostini just before serving for best texture. Adjust honey and chili flakes to taste. Whipped feta can be made in advance and stored in the fridge.
