These tender mini sugar cookies are soft, melt-in-your-mouth treats perfect for parties, bake sales, or cozy weekend snacks. Made with simple pantry ingredients, they deliver nostalgic comfort with a quick and easy preparation.

Ingredients

Scale
  • 1 cup (227 grams) unsalted butter, softened
  • 1 cup (200 grams) granulated sugar
  • 1 large egg, room temperature
  • 1 teaspoon pure vanilla extract
  • 2 ΒΎ cups (345 grams) all-purpose flour
  • 1 teaspoon baking powder
  • Β½ teaspoon salt
  • Optional: Sprinkles or colored sugar for decoration

Instructions

  1. Preheat your oven to 350Β°F (175Β°C).
  2. Cream the butter and sugar in a large bowl using an electric mixer on medium speed for 3-4 minutes until light and fluffy.
  3. Add the egg and vanilla extract; beat until fully incorporated and smooth, about 1 minute.
  4. In a separate bowl, whisk together the flour, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet ingredients with the mixer on low speed, mixing just until combined.
  6. Cover the dough with plastic wrap and refrigerate for at least 30 minutes.
  7. Using a teaspoon or small cookie scoop, roll dough into mini balls about 1 inch (2.5 cm) in diameter and place them 2 inches (5 cm) apart on parchment-lined baking sheets.
  8. Optionally, sprinkle colored sugar or festive sprinkles on top of each dough ball.
  9. Bake for 8-10 minutes until cookies are just set and lightly golden around the edges but still pale on top.
  10. Remove from oven and let cookies sit on the baking sheet for 2 minutes, then transfer to a cooling rack to cool completely.

Notes

Chilling the dough is essential for tender cookies and to prevent spreading. Use room temperature butter and eggs for best creaming results. Avoid overmixing once flour is added to keep cookies soft. Store cookies in an airtight container with a slice of bread to maintain softness. Dough can be refrigerated up to 48 hours before baking. Freeze shaped dough balls for longer storage and bake from frozen by adding 1-2 minutes to baking time.
