Instructions

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper or silicone mats.
  2. In a large bowl, sift together the flour, cocoa powder, baking powder, and salt. Whisk to combine evenly.
  3. In another bowl, beat the softened butter with granulated sugar using an electric mixer on medium speed until light and fluffy, about 3 minutes.
  4. Beat in the eggs one at a time, mixing well after each addition. Stir in vanilla extract and gel red food coloring until the dough turns vibrant pink.
  5. Gradually add the dry ingredients to the wet mixture, mixing on low speed or folding gently with a spatula until just combined.
  6. Gently fold in the white chocolate chips.
  7. Cover the bowl with plastic wrap and refrigerate the dough for at least 30 minutes.
  8. Using a cookie scoop or spoon, form 1 ½-inch balls and roll each ball generously in powdered sugar until fully coated.
  9. Place the coated dough balls 2 inches apart on the prepared baking sheets.
  10. Bake for 10-12 minutes or until the tops are set but still soft to the touch.
  11. Let the cookies cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
