  • 2 cups beef broth (low-sodium recommended)
  • 1 large onion, thinly sliced
  • 4 cloves garlic, minced
  • 2 tablespoons Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste
  • 46 French rolls or baguette
  • 46 slices Swiss cheese (optional)

Instructions

  1. Trim excess fat from the chuck roast, leaving some for flavor and moisture. Pat dry with paper towels.
  2. Optional: Heat 1 tablespoon oil in a large skillet over medium-high heat. Sear the roast on all sides for 8-10 minutes until a deep golden crust forms. Transfer to slow cooker.
  3. Spread sliced onions and minced garlic evenly over the roast.
  4. Pour 2 cups beef broth over the roast. Stir in Worcestershire sauce, dried thyme, rosemary, salt, and pepper. The broth should partially cover the roast.
  5. Cover and cook on low for 8-9 hours or on high for 4-5 hours until beef is fork-tender.
  6. Remove beef from slow cooker and tent with foil to rest. Strain cooking liquid through a fine sieve into a saucepan, discarding solids. Simmer to reduce slightly and adjust seasoning.
  7. Slice beef thinly against the grain. Optionally, mix slices back into some au jus to keep juicy.
  8. Split French rolls, layer with sliced beef and Swiss cheese if desired. Toast under broiler for 2-3 minutes until cheese melts and rolls are crisp.
  9. Serve sandwiches warm with au jus on the side for dipping.

Notes

Searing the roast before slow cooking adds depth of flavor but is optional. Avoid lifting the slow cooker lid during cooking to maintain temperature. Slice beef against the grain for tenderness. Keep au jus warm but do not boil to prevent bitterness. Use gluten-free rolls for a gluten-free version. Leftovers can be stored separately and reheated gently.
