Tender slow-cooked beef chuck roast served on slider rolls with melted provolone cheese and a rich, flavorful au jus dip. Perfect for potlucks, game days, or cozy dinners.

  • 4 cups beef broth (low sodium recommended)
  • 1 large onion, thinly sliced
  • 3 garlic cloves, minced
  • 2 tbsp Worcestershire sauce
  • 1 tsp Italian seasoning

  • 12 slider rolls
  • 12 slices provolone cheese
  • 2 tbsp butter, melted (optional for brushing slider tops)
  • Optional: 1 tsp fresh thyme or rosemary, chopped (can substitute Italian seasoning)
  • Optional: horseradish sauce for serving

Instructions

  1. Trim excess fat from the beef chuck roast. Slice the onion thinly and mince the garlic cloves. Season the roast generously with salt, pepper, and Italian seasoning on all sides.
  2. Optional but recommended: Heat a skillet over medium-high heat with oil and brown the roast on all sides until golden crust forms. Transfer to the slow cooker.
  3. Place sliced onions and minced garlic at the bottom of the slow cooker. Set the seared roast on top. Pour in beef broth and add Worcestershire sauce. Sprinkle extra Italian seasoning if desired.
  4. Cover and cook on low for 8 hours until beef is fork-tender and pulls apart easily.
  5. Remove beef and let rest for 10 minutes. Strain cooking liquid through a fine sieve into a saucepan. Simmer gently for 10-15 minutes to reduce and concentrate flavor. Season au jus to taste.
  6. Shred the beef using two forks or hands once cooled slightly.
  7. Slice slider rolls horizontally. Layer shredded beef on bottom halves, top with provolone cheese slices. Broil or bake at 350°F (175°C) for 5 minutes until cheese melts.
  8. Optional: Brush tops of slider buns with melted butter for a golden finish. Serve sliders warm with au jus on the side for dipping.

Notes

Searing the roast before slow cooking adds depth of flavor. Let beef rest before shredding for easier handling. Strain and reduce au jus for best flavor. Adjust seasoning of au jus with Worcestershire sauce or garlic powder if needed. Slow cookers vary; check tenderness after 7 hours. Use gluten-free buns and sauces for gluten-free adaptation. Can braise in Dutch oven at 300°F for 3-4 hours if no slow cooker.
