This Turkey Pho recipe combines the lightness of turkey with the bold flavors of traditional pho, creating a cozy and aromatic dish perfect for chilly evenings.

  • Cooked turkey, shredded or sliced
  • Medium-width rice noodles
  • 6 cups chicken broth or turkey stock
  • 1 onion, halved and charred
  • 2-inch piece of fresh ginger, sliced and lightly crushed
  • 2 whole star anise pods
  • 1 cinnamon stick
  • 3 whole cloves
  • 2 tablespoons fish sauce (or soy sauce)
  • 1 teaspoon sugar
  • Bean sprouts
  • Fresh herbs (Thai basil, cilantro, mint)
  • Lime wedges
  • Optional toppings: sliced jalapeños, hoisin sauce, sriracha

Instructions

  1. Heat a dry skillet over medium heat, then add the halved onion and sliced ginger. Cook until lightly charred, about 3-4 minutes per side.
  2. In a large stockpot, combine chicken broth, charred aromatics, star anise, cinnamon stick, and cloves. Bring to a gentle boil, then reduce to a simmer for 30 minutes.
  3. Prepare the rice noodles according to package instructions. Drain and set aside.
  4. Add fish sauce and sugar to the broth. Taste and adjust seasoning as needed.
  5. Using a mesh strainer, remove the solids from the broth and return the liquid to the pot.
  6. Add shredded turkey to the broth and let it warm through for 5 minutes.
  7. Divide the cooked noodles between serving bowls. Ladle the hot broth and turkey over the noodles.
  8. Garnish each bowl with bean sprouts, fresh herbs, lime wedges, and optional jalapeños, hoisin sauce, or sriracha.
