Instructions

  1. If starting with whole lobsters, boil or steam about 1.5 pounds until shells turn bright red (8-12 minutes). Let cool, pick meat from tails and claws, discard shells, and chop into 1/2-inch chunks. If using pre-cooked lobster meat, chop and set aside.
  2. In a large bowl, combine mayonnaise, lemon juice, Dijon mustard (if using), salt, and pepper. Whisk gently until smooth but not runny.
  3. Fold in diced celery, sliced green onions, and chopped fresh dill or parsley. Stir to combine evenly.
  4. Gently fold chopped lobster meat into the dressing mixture, keeping chunks intact. Taste and adjust seasoning as needed.
  5. Heat butter in a skillet over medium heat. Butter the cut sides of the buns generously and toast butter-side down until golden brown and crisp, about 2 minutes.
  6. Spoon a generous amount of the creamy lobster mixture into each toasted bun without overfilling.
  7. Serve immediately with a wedge of lemon and optional sides like kettle chips or a fresh green salad.

Do not overmix the lobster with the dressing to preserve texture. Toast buns with butter until golden for best flavor and crunch.
