  • 2 cloves garlic, minced
  • 1 tsp ground cumin
  • 1 tsp chili powder
  • Salt and black pepper, to taste
  • Tortilla chips
  • 1 can black beans, drained and rinsed
  • 1 cup cooked ground beef or shredded chicken (optional)
  • 1 cup diced tomatoes or fresh pico de gallo
  • 1/2 cup sliced jalapeños (pickled or fresh)
  • 1/2 cup chopped green onions
  • 1/2 cup sliced black olives
  • 1 cup shredded lettuce or cabbage
  • 1/2 cup sour cream or Greek yogurt
  • Fresh cilantro leaves for garnish

Instructions

  1. Finely chop the onion, mince the garlic, and shred the cheeses if needed. Drain and rinse the black beans, and prepare toppings in separate bowls (about 10-15 minutes).
  2. In the slow cooker, add softened cream cheese, shredded cheddar, Monterey Jack, diced tomatoes with green chilies, chopped onion, and garlic. Pour in the milk or half-and-half and stir gently to combine.
  3. Set the slow cooker to low and cover. Cook for 1 to 1.5 hours, stirring every 20-30 minutes to prevent sticking and encourage smooth melting. Add more milk if queso becomes too thick.
  4. Stir in cumin, chili powder, salt, and black pepper. Taste and adjust seasoning as needed.
  5. Warm cooked ground beef or shredded chicken in a skillet or microwave if using.
  6. Arrange tortilla chips on a large platter or plates. Surround with bowls of queso, black beans, meat, tomatoes, jalapeños, olives, green onions, lettuce, sour cream, and cilantro.
