A refreshing and visually stunning lemonade that changes color from blue to purple when lemon juice is added, made with natural butterfly pea flowers and fresh lemon juice.

  • 1/4 cup (6 grams) dried butterfly pea flowers
  • 4 cups (960 ml) water for steeping
  • 4 cups (960 ml) cold water to dilute
  • 1/2 cup (120 ml) freshly squeezed lemon juice
  • 1/3 cup (65 grams) granulated sugar or honey, adjusted to taste
  • Ice cubes, for serving
  • Optional garnish: thin lemon slices, fresh mint leaves, or edible flowers

Instructions

  1. Bring 4 cups (960 ml) of water to a boil in a saucepan or kettle.
  2. Place 1/4 cup (6 grams) dried butterfly pea flowers into a heatproof pitcher or bowl. Pour the hot water over the flowers, stir gently, and steep for about 10 minutes until the water turns deep indigo blue. Do not steep longer than 15 minutes to avoid bitterness.
  3. Strain the liquid through a fine mesh strainer into a clean pitcher, discarding the flowers.
  4. While the liquid is still warm, stir in 1/3 cup (65 grams) granulated sugar or honey until fully dissolved.
  5. Let the butterfly pea flower concentrate cool to room temperature or chill briefly in the fridge for about 15 minutes.
  6. Stir in 1/2 cup (120 ml) freshly squeezed lemon juice, then add 4 cups (960 ml) cold water to dilute. Watch the color shift from blue to purple or pink.
  7. Taste and adjust sweetness by adding more sweetener if needed.
  8. Fill the pitcher with ice cubes and garnish with lemon slices or fresh mint leaves.
  9. Serve immediately to enjoy the full color-changing effect and refreshing flavor.

Notes

Do not oversteep butterfly pea flowers to avoid bitterness. Use fresh lemon juice for best color change and flavor. Serve chilled over plenty of ice for the most vivid color effect. Adjust sweetness to taste. For a stronger color, use less water when diluting and add more ice when serving.
