Instructions

  1. Brown the butter over medium heat in a light-colored saucepan until golden brown specks appear and a nutty aroma develops, about 10 minutes. Remove from heat and let cool slightly.
  2. Grate the zucchini using a box grater and squeeze out excess moisture with a clean kitchen towel or paper towels, about 5 minutes.
  3. Whisk together flour, baking soda, baking powder, salt, cinnamon, and nutmeg in a separate bowl, about 5 minutes.
  4. Beat the browned butter with sugar until well combined. Add eggs one at a time, beating after each addition, then mix in vanilla extract, about 5 minutes.
  5. Gradually add dry ingredients to wet mixture, stirring gently with a spatula until just combined. Fold in grated zucchini carefully to avoid overmixing, about 5 minutes.
  6. Prepare the cinnamon streusel by combining brown sugar, flour, and cinnamon in a small bowl. Cut in cold butter with a fork or pastry cutter until mixture resembles coarse crumbs, about 5 minutes.
  7. Pour batter into a greased or parchment-lined 9×5-inch loaf pan. Sprinkle cinnamon streusel evenly on top.
