Ingredients

Scale
  • 2 cups (240 g) all-purpose flour
  • 1 ½ cups (135 g) old-fashioned rolled oats
  • ¾ cup (150 g) light brown sugar
  • 1 cup (225 g) unsalted butter, cold and cubed
  • 1 ½ teaspoons ground cinnamon
  • ¼ teaspoon salt
  • 4 medium apples (about 1 lb / 450 g), peeled and thinly sliced (Granny Smith or Honeycrisp recommended)
  • ⅓ cup (65 g) granulated sugar
  • 1 teaspoon ground cinnamon
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon all-purpose flour

Instructions

  1. Preheat your oven to 350°F (175°C). Line a 9×13-inch baking pan with parchment paper, leaving some overhang for easy removal later.
  2. In a large mixing bowl, combine 2 cups all-purpose flour, 1 ½ cups rolled oats, ¾ cup brown sugar, 1 ½ teaspoons cinnamon, and ¼ teaspoon salt. Mix evenly.
  3. Cut in the cold, cubed butter using a pastry cutter or fingers until the mixture resembles coarse crumbs with some pea-sized bits, about 5-7 minutes.
  4. Reserve about 1 ½ cups (190 g) of this mixture for the topping. Press the remaining mixture evenly into the bottom of the prepared pan to form the crust. Chill in the fridge while preparing the filling.
  5. In a medium bowl, toss the sliced apples with ⅓ cup granulated sugar, 1 teaspoon cinnamon, 1 tablespoon lemon juice, and 1 tablespoon flour until evenly coated.
  6. Spread the apple mixture evenly over the chilled crust, ensuring the layer is even but not packed down.
  7. Sprinkle the reserved oat streusel mixture over the apple layer, breaking up any clumps to cover the filling nicely.
  8. Bake for 45-50 minutes until the topping is golden brown and apples are bubbly and soft. Tent with foil after 35 minutes if topping browns too fast.
  9. Cool completely in the pan on a wire rack for at least an hour to set the bars.
  10. Use the parchment overhang to lift the slab out and slice into bars. Serve warm or at room temperature.

Notes

Keep butter cold for a flaky streusel texture. Thinly slice apples to avoid sogginess. Chill crust before adding filling to help bars hold together. Tent with foil if topping browns too quickly. Rolled oats are preferred over quick oats for better texture. Optional: add chopped walnuts or pecans to streusel for extra crunch. For vegan or gluten-free versions, substitute ingredients accordingly.
