  • For the Brown Butter Glaze:
  • 1/4 cup unsalted butter, browned
  • 1/4 cup powdered sugar, sifted
  • 1 tablespoon pure maple syrup
  • 12 tablespoons whole milk or dairy-free milk
  • Pinch of salt

Instructions

  1. Brown the butter: Place 1/2 cup unsalted butter in a medium skillet over medium heat. Stir frequently until golden-brown and nutty, about 5-7 minutes. Remove from heat and cool slightly.
  2. Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line with parchment paper.
  3. In a large bowl, whisk mashed bananas, browned butter, maple syrup, eggs, and vanilla extract until smooth.
  4. In a separate bowl, mix flour, baking soda, and salt.
  5. Gently fold dry ingredients into wet mixture until just combined; a few lumps are okay.
  6. Fold in toasted walnuts.
  7. Pour batter into prepared loaf pan and smooth the top.
  8. Bake for 55-65 minutes or until a toothpick inserted in the center comes out clean or with a few moist crumbs. Tent with foil after 40 minutes if top browns too fast.
  9. Cool bread in pan for 15 minutes, then transfer to wire rack to cool completely.
  10. Make the glaze: Brown 1/4 cup unsalted butter as before. Off heat, whisk in powdered sugar, maple syrup, salt, and milk until smooth and pourable.
  11. Drizzle glaze over cooled loaf. Let set slightly before slicing and serving.

Notes

Do not overmix the batter to avoid tough bread; a few lumps are fine. Toast walnuts in a dry skillet for best flavor. Cool bread completely before glazing to prevent melting. For gluten-free, substitute flour with a 1:1 gluten-free blend. For dairy-free, use coconut oil or vegan butter and dairy-free milk.
