  • 4 large yellow onions, thinly sliced
  • 4 tablespoons unsalted butter
  • 3 garlic cloves, minced
  • 6 cups (1.4 liters) beef broth (low-sodium preferred)
  • 1/2 cup (120 ml) dry white wine (optional)
  • 2 bay leaves
  • 1 teaspoon dried thyme or a few fresh sprigs
  • Salt and freshly ground black pepper, to taste
  • 8 thick slices baguette (slightly stale preferred)
  • 2 cups shredded Gruyère cheese (about 200 grams)

Instructions

  1. Peel and thinly slice 4 large yellow onions into even strips (about 10 minutes).
  2. Add 4 tablespoons unsalted butter to the slow cooker and set to low. Once melted, add sliced onions and 3 minced garlic cloves. Stir to coat onions in butter.
  3. Cover and cook on low for 6 hours, stirring every 1-2 hours and scraping sides to prevent burning, until onions are deeply golden and tender.
  4. Add 6 cups beef broth, 1/2 cup dry white wine, 2 bay leaves, and 1 teaspoon thyme. Season with salt and pepper to taste. Stir gently to combine.
  5. Cover and cook on low for another 1.5 to 2 hours. Taste and adjust seasoning. Remove bay leaves and thyme stems before serving.
  6. Preheat oven broiler. Arrange 8 baguette slices on a baking sheet. Top each slice with about 1/4 cup shredded Gruyère cheese.
  7. Broil for 2-4 minutes until cheese is bubbly and golden brown, watching closely to avoid burning.
  8. Ladle hot soup into oven-safe bowls. Place one or two Gruyère toasts on top of each bowl. Optionally, place bowls under broiler for 1 minute to melt cheese further. Serve immediately.

Notes

If soup tastes too sweet, add a splash of red wine vinegar or lemon juice. If too salty, add more broth or water. Stir onions every 1-2 hours to prevent burning. Gruyère cheese melts quickly under broiler—watch closely. For vegetarian version, use mushroom or vegetable broth and omit wine. Gluten-free option: use gluten-free bread and dairy-free cheese alternatives.
