  • 1/2 cup chicken broth (120 ml), low sodium
  • 1/2 cup grated Parmesan cheese (about 50 g)
  • 1 tsp Italian seasoning
  • 1/4 tsp red pepper flakes (optional)
  • Salt and black pepper to taste
  • Fresh basil or parsley for garnish (optional)
  • 1 tbsp olive oil (for sautéing garlic, optional)

Instructions

  1. Pat dry the chicken breasts and season both sides with salt, pepper, and Italian seasoning.
  2. Optional: Warm olive oil in a pan over medium heat and sauté minced garlic for about 1 minute until fragrant but not browned.
  3. In a mixing bowl, combine heavy cream, chicken broth, grated Parmesan cheese, sautéed garlic, chopped sun-dried tomatoes, and red pepper flakes if using. Stir gently to mix.
  4. Place the seasoned chicken breasts in the bottom of the slow cooker.
  5. Pour the creamy tomato mixture evenly over the chicken, covering the pieces mostly.
  6. Cover and cook on low for 4 hours or on high for about 2.5 hours. Avoid lifting the lid during cooking.
  7. Check that the chicken reaches an internal temperature of 165°F (74°C) and is tender. The sauce should be thick and creamy with bubbly edges.
  8. Taste the sauce and adjust salt and pepper as needed. Stir gently to combine the sauce and chicken.
  9. Garnish with chopped fresh basil or parsley before serving.
  10. Optional: If sauce is too thin, mix 1 tsp cornstarch with 1 tbsp cold water and stir into the crockpot about 15 minutes before serving, turning heat to high to thicken.
