  • 1/2 cup chicken broth
  • 3/4 cup heavy cream
  • 1/3 cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • 1/4 teaspoon red pepper flakes (optional)
  • A handful fresh basil or parsley, chopped

Instructions

  1. Pat chicken breasts dry and pound to about 1/2-inch thickness. Season both sides with salt and pepper.
  2. Heat olive oil in a large skillet over medium-high heat. Sear chicken breasts for 5-6 minutes per side until golden and cooked through. Remove and keep warm.
  3. Reduce heat to medium. Add butter to the skillet. Once melted, sauté garlic and sun-dried tomatoes for 1-2 minutes until fragrant.
  4. Pour in chicken broth, scraping the pan to release browned bits. Simmer for 2-3 minutes until slightly reduced.
  5. Stir in heavy cream, Parmesan cheese, Italian seasoning, and red pepper flakes if using. Simmer for 3-5 minutes until sauce thickens.
  6. Return chicken to skillet, spoon sauce over, and cook together for 2 minutes to warm through.
  7. Garnish with chopped fresh basil or parsley before serving.

If sauce is too thick, add a splash more broth or cream to loosen. Use half-and-half for a lighter sauce or coconut cream for dairy-free. Confirm broth is gluten-free if needed. Pounding chicken ensures even cooking and tenderness.
