Creamy One-Pot Chicken and Wild Rice Soup

A comforting and hearty one-pot soup combining wild rice, mushrooms, and tender chicken in a creamy broth. Easy to make and perfect for cozy dinners.

  • 1 pound boneless, skinless chicken thighs or breasts
  • 1 cup wild rice blend
  • 8 ounces white or cremini mushrooms, sliced
  • 1 medium yellow onion, finely chopped
  • 2 medium carrots, diced
  • 2 celery stalks, diced
  • 3 garlic cloves, minced
  • 6 cups chicken broth (low sodium preferred)
  • 1 cup heavy cream or half-and-half (or coconut cream for dairy-free)
  • 2 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • 1 teaspoon fresh thyme, chopped (or ½ teaspoon dried)
  • 1 bay leaf
  • Salt and black pepper to taste
  • Optional: Fresh parsley, chopped (for garnish)

Instructions

  1. Dice the onion, carrots, and celery; slice the mushrooms; mince the garlic; and cut the chicken into 1-inch chunks. Rinse the wild rice blend under cold water if desired.
  2. Heat butter and olive oil over medium heat in a large pot. Add onions, carrots, and celery and sauté until softened and translucent, about 5–7 minutes. Add garlic and mushrooms and cook for another 5 minutes until mushrooms release moisture and start to brown.
  3. Add chicken pieces to the pot, season lightly with salt and pepper, and cook until they just start to brown on the outside but are not cooked through, about 4–5 minutes. Stir to combine with the veggies.
  4. Add wild rice blend, chicken broth, bay leaf, and thyme. Bring to a boil, then reduce heat to low and simmer covered for 40–45 minutes, stirring occasionally, until rice is tender and chicken is cooked through.
  5. Remove bay leaf and stir in heavy cream or half-and-half. Heat gently for 5 minutes without boiling. Adjust seasoning with salt and pepper to taste.
  6. Ladle soup into bowls and garnish with fresh parsley if desired. Serve warm.

Notes

Use chicken thighs for more flavor and tenderness. Rinse wild rice before cooking to remove excess starch. To avoid curdling, add cream at the end and heat gently without boiling. Adjust thickness by adding broth or simmering longer. For dairy-free, substitute heavy cream with coconut cream. Slow cooker method possible but texture differs.
