  • 8 ounces (225 grams) feta cheese, preferably full-fat
  • 1/4 cup (60 ml) plain Greek yogurt
  • 2 cups (300 grams) fresh cherry tomatoes, halved
  • 2 tablespoons (30 ml) extra-virgin olive oil
  • 2 tablespoons (40 grams) honey
  • 1/2 cup (60 grams) walnuts, roughly chopped
  • 1 small clove fresh garlic, minced
  • 1 tablespoon (15 ml) freshly squeezed lemon juice
  • 1 tablespoon chopped fresh basil or thyme (optional)
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 275°F (135°C).
  2. Toss halved cherry tomatoes with 1 tablespoon olive oil and a pinch of salt on a rimmed baking sheet. Spread evenly and roast for 45–50 minutes until soft, slightly shriveled, and caramelized.
  3. Toast walnuts in a dry skillet over medium heat for 3–5 minutes, stirring often. Transfer to a bowl and immediately drizzle with honey. Toss to coat and set aside to cool.
  4. In a food processor, combine crumbled feta, Greek yogurt, lemon juice, minced garlic, and 1 tablespoon olive oil. Pulse until smooth and creamy, scraping down sides as needed. Add water or more yogurt if too thick.
  5. Gently fold roasted tomatoes and honey walnuts into the whipped feta mixture. Season with black pepper and salt to taste.
  6. Garnish with fresh herbs and drizzle a little olive oil on top if desired. Serve at room temperature with warm pita bread, crackers, or fresh vegetables.

Notes

Let feta sit at room temperature for 15 minutes before blending for best texture. Roast tomatoes slowly at low temperature to avoid bursting. Toast walnuts gently and coat immediately with honey for perfect glaze. Fold ingredients gently to maintain texture. Can prepare tomatoes and walnuts up to 24 hours ahead and store separately.
