Crispy Easy BBQ Chicken Pizza on the Grill

A quick and easy grilled pizza featuring a crispy crust, smoky BBQ chicken, and melty mozzarella cheese, perfect for summer BBQs and outdoor gatherings.

  • 1 ball pizza dough (about 12 ounces/340 grams), store-bought or homemade
  • 1 ½ cups cooked chicken (about 200 grams), shredded or chopped
  • ½ cup BBQ sauce (120 ml), your favorite smoky variety
  • 1 ½ cups shredded mozzarella cheese (170 grams)
  • ¼ cup thinly sliced red onion
  • 2 tablespoons chopped cilantro (optional)
  • 1 tablespoon olive oil, for brushing the dough
  • Salt and pepper to taste

Instructions

  1. Prepare the chicken by tossing shredded cooked chicken with ½ cup BBQ sauce until well coated. Set aside to marinate for about 5 minutes.
  2. Preheat the grill to medium-high heat (around 450°F/232°C). Clean and oil the grill grate.
  3. On a lightly floured surface, stretch or roll out the pizza dough into a roughly 12-inch circle. Brush one side with olive oil.
  4. Place the dough oiled-side down onto the grill. Close the lid and cook for 2-3 minutes until grill marks appear and the crust firms up but is not fully cooked.
  5. Flip the dough carefully using a spatula or pizza peel. Brush the grilled side with olive oil.
  6. Spread a thin layer of BBQ sauce over the grilled side, then evenly add the chicken, sliced red onions, and shredded mozzarella cheese.
  7. Close the grill lid and cook for another 3-4 minutes until the cheese melts and bubbles and the crust is crispy and golden brown. Move pizza to a cooler spot if flare-ups occur.
  8. Remove the pizza from the grill and sprinkle chopped cilantro on top. Let rest for 2 minutes before slicing.
  9. Slice into 6-8 pieces and serve hot with your favorite summer sides or appetizers.

Notes

If dough sticks, sprinkle cornmeal under it before grilling. Avoid overloading toppings to keep crust crispy. Use indirect heat if flare-ups occur. For gluten-free, use almond flour or cauliflower crust and adjust grilling time. For dairy-free, substitute mozzarella with plant-based cheese.
