  • Firecracker Sauce:

  • 1 teaspoon smoked paprika
  • 1 tablespoon fresh lime juice

  • Pickled jalapeños

Instructions

  1. Prepare the Firecracker Sauce: In a medium mixing bowl, combine ½ cup mayonnaise, 2 tablespoons sriracha, 1 tablespoon honey, 1 teaspoon garlic powder, 1 teaspoon smoked paprika, and 1 tablespoon fresh lime juice. Whisk well until smooth. Taste and adjust sriracha or honey if desired. Set aside.
  2. Wrap the Hot Dogs: Lay out a strip of bacon and place a hot dog at one end. Roll tightly from one end until the entire hot dog is wrapped. Tuck the bacon end underneath the hot dog to secure. Repeat for all hot dogs.
  3. Cook the Bacon-Wrapped Hot Dogs: Heat a non-stick skillet or cast iron pan over medium heat. Place the bacon-wrapped hot dogs seam side down first to seal the bacon. Cook for 3-4 minutes until bacon crisps and browns. Rotate every 3-4 minutes to crisp all sides evenly, about 12-15 minutes total. Adjust heat to prevent burning.
  4. Drain and Rest: Transfer cooked hot dogs to a paper towel-lined plate to absorb excess grease. Let rest for 2 minutes to lock in juiciness.
  5. Garnish and Serve: Drizzle firecracker sauce over the hot dogs or serve on the side for dipping. Add optional garnishes like chopped cilantro, toasted sesame seeds, or pickled jalapeños.

Notes

Cook bacon-wrapped hot dogs in batches if pan is crowded to ensure crispiness. Use tongs with silicone tips to avoid piercing bacon. Rest hot dogs after cooking to lock in juices and improve crispiness. For a different texture, finish under broiler for 1-2 minutes. Can be baked at 400°F for 20 minutes, turning halfway through.
