Instructions

  1. Line an 8×8-inch (20×20 cm) baking pan with parchment paper, leaving some overhang on the sides.
  2. In a medium bowl, combine 1/2 cup (115g) softened unsalted butter and 1 cup (250g) peanut butter. Mix with a hand mixer on medium speed or a wooden spoon until smooth and creamy, about 2-3 minutes.
  3. Stir in 1 teaspoon (5ml) vanilla extract and a pinch of salt.
  4. Gradually sift in 2 cups (240g) powdered sugar, folding gently with a spatula after each addition. When mixture becomes too thick to stir, knead with clean hands until firm but pliable.
  5. Scrape the fudge mixture into the prepared pan and press evenly with a spatula or back of a spoon. Optionally, fold in chopped peanuts or mini chocolate chips before pressing.
  6. Chill in the refrigerator for at least 2 hours or until firm to the touch.
  7. Lift fudge out using parchment overhang and cut into 1-inch (2.5 cm) squares with a warm, dry knife.
