An easy and comforting French toast bake featuring cream cheese and blueberries, perfect for busy mornings or leisurely weekends. This recipe combines simple ingredients to create a custardy, flavorful breakfast that’s a family favorite.

Ingredients

Scale
  • 6 cups cubed day-old bread (preferably challah or brioche)
  • 1 cup fresh or frozen blueberries
  • 8 oz cream cheese, cut into small cubes
  • 6 large eggs, room temperature
  • 2 cups whole milk (or almond/oat milk for dairy-free)
  • 1 teaspoon pure vanilla extract
  • ½ cup granulated sugar
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon salt
  • 2 tablespoons melted butter (for greasing and custard)
  • Optional toppings: maple syrup, powdered sugar, extra fresh blueberries

Instructions

  1. Grease a 9×13-inch baking dish with 2 tablespoons of melted butter.
  2. Cube the bread into roughly 1-inch pieces.
  3. Place half the bread cubes evenly in the prepared dish. Scatter half the cream cheese cubes and half the blueberries over the bread layer.
  4. Repeat layering with the remaining bread, cream cheese, and blueberries.
  5. In a large bowl, whisk together eggs, milk, sugar, vanilla, cinnamon, and salt until smooth and slightly frothy.
  6. Pour the custard evenly over the layered bread, pressing down gently with a spatula. Let it sit for 5-10 minutes to absorb.
  7. Preheat oven to 350°F (175°C) while the bake soaks.
  8. Bake uncovered for 45-50 minutes, or until the top is golden brown and custard is set (toothpick inserted should come out clean).
  9. Remove from oven and let cool slightly before cutting.
  10. Optional: Dust with powdered sugar or drizzle with maple syrup before serving.

Notes

If the top browns too quickly, loosely tent with foil during baking. Let the bread soak in the custard for 5-10 minutes for best texture. Use room temperature eggs and milk for smooth custard. Frozen blueberries can be tossed in flour to prevent sinking. Leftovers keep well refrigerated for 3 days or frozen for up to a month.
