Instructions

  1. Preheat your oven to 425°F (220°C).
  2. In a large mixing bowl, toss halved baby potatoes, asparagus spears, cherry tomatoes, and red onion wedges with 2 tablespoons olive oil, 1 teaspoon salt, 1/2 teaspoon black pepper, 1/2 teaspoon garlic powder, and fresh thyme or rosemary sprigs.
  3. Spread the vegetables evenly on one side of a large rimmed baking sheet.
  4. Roast the vegetables in the oven for 10 minutes to give potatoes and onions a head start.
  5. While vegetables roast, pat dry the salmon fillets thoroughly with paper towels.
  6. Drizzle 1 tablespoon olive oil over each salmon fillet, then season generously with salt, pepper, garlic powder, and lemon zest.
