Easy Homemade Uncrustables Sandwiches with Strawberry Chia Jam

A nostalgic and wholesome remake of the classic uncrustable sandwich featuring soft white bread and a fresh, vibrant strawberry chia jam. Quick and easy to make, perfect for snacks or lunchboxes.

Ingredients

  • White sandwich bread, soft and fresh (preferably thick, fluffy loaf)
  • Butter or softened cream cheese (optional, for spreading)
  • Fresh strawberries, hulled and chopped (about 2 cups / 300 grams)
  • Chia seeds (2 tablespoons)
  • Maple syrup or honey (2 tablespoons)
  • Fresh lemon juice (1 tablespoon)

Instructions

  1. Make the Strawberry Chia Jam: Place chopped strawberries in a medium saucepan over medium heat. Gently crush the berries with a fork or potato masher as they warm. Cook for about 5 minutes until fruit breaks down and releases juices.
  2. Add maple syrup (or honey) and lemon juice, stirring to combine. Simmer for another 3-4 minutes, stirring occasionally, until slightly thickened.
  3. Remove from heat and stir in chia seeds. Let jam cool completely; it will thicken more as it cools. If too runny, add a pinch more chia seeds and let sit a few minutes longer.
  4. Prepare the Bread: Remove crusts from bread slices using a sharp knife. Optionally spread a thin layer of softened butter or cream cheese on one side of each slice.
  5. Place about 1 to 1.5 tablespoons (15 to 22 grams) of cooled strawberry chia jam in the center of half the bread slices. Avoid overfilling.
  6. Assemble the Sandwiches: Top each jam-covered slice with a plain slice of bread, butter or cream cheese side down if used. Press gently to adhere.
  7. Using a round sandwich cutter or cookie cutter (about 3 inches diameter), press firmly down through the bread to cut out a circle. Press edges firmly to seal the sandwich completely.
  8. Store or Serve: Enjoy immediately or wrap sandwiches in plastic wrap and refrigerate. They keep well for 2-3 days in the fridge or can be frozen for up to 1 month.
  9. To thaw frozen sandwiches, leave in fridge overnight or at room temperature for an hour. Serve cold or at room temperature, or lightly toast if desired.

Notes

Chill bread briefly before cutting to prevent tearing. Press edges firmly to seal sandwiches and prevent leaks. Add a thin layer of nut butter under jam for extra protein and flavor. Store wrapped tightly in plastic wrap or airtight container. Freeze for longer storage up to 1 month. Avoid microwaving to prevent soggy bread.
