  • 2 tablespoons granulated sugar
  • ½ teaspoon salt
  • 57 tablespoons ice water
  • 34 medium nectarines, thinly sliced
  • ½ cup (50g) sliced almonds, toasted
  • 2 tablespoons brown sugar
  • 1 tablespoon lemon juice
  • ¼ teaspoon ground cinnamon
  • 3 tablespoons honey
  • 1 tablespoon water

Instructions

  1. In a large bowl, whisk together flour, granulated sugar, and salt.
  2. Add cold, cubed unsalted butter and cut into the flour using a pastry cutter or fingertips until mixture resembles coarse crumbs with some pea-sized bits.
  3. Drizzle 5 tablespoons of ice water over the mixture and gently combine with a fork. Add up to 2 more tablespoons if dough is too dry. Stop mixing once dough holds together when pressed.
  4. Shape dough into a flattened disk, wrap in plastic wrap, and refrigerate for at least 30 minutes.
  5. While dough chills, combine sliced nectarines, toasted almonds, brown sugar, lemon juice, and ground cinnamon in a bowl and toss gently to coat.
  6. On a lightly floured surface, roll chilled dough into a roughly 12-inch circle.
  7. Transfer dough to a parchment-lined baking sheet. Pile nectarine mixture in the center, leaving about a 2-inch border. Fold edges over fruit, pleating to create a loose, open tart.
  8. Preheat oven to 375°F (190°C). Bake galette for 35-40 minutes until crust is golden and fruit is bubbly. Tent edges with foil if browning too fast.
  9. While baking, warm honey and water in a small saucepan until runny. Brush honey glaze over warm galette immediately after baking.
  10. Let galette cool for 10-15 minutes before serving.
