A quick and easy no-heat pasta lunch made by soaking dry pasta in boiling water inside a thermos, combined with fresh cherry tomatoes and mini pepperoni for a fresh, savory summer meal.

  • ¾ cup (85g) dry pasta (small shapes like elbow macaroni, ditalini, or mini shells)
  • 1 cup (240ml) boiling water
  • 1 cup (150g) cherry tomatoes, halved
  • ¼ cup (30g) mini pepperoni slices
  • 1 tablespoon extra virgin olive oil
  • 2 tablespoons grated Parmesan cheese
  • A handful of fresh basil leaves, chopped (optional)
  • Salt and black pepper to taste

Instructions

  1. Preheat your thermos by pouring boiling water into it, closing the lid, and letting it sit for 5 minutes.
  2. While the thermos is warming, halve the cherry tomatoes and chop the basil leaves. Measure out the dry pasta and mini pepperoni slices.
  3. Drain the hot water from the thermos after 5 minutes.
  4. Add the dry pasta to the warm thermos and pour in the boiling water to cover the pasta completely. Seal the lid tightly.
  5. Let the pasta soak in the thermos for 30 minutes to cook gently.
  6. After soaking, open the thermos and carefully drain any excess water, leaving the pasta moist but not swimming.
  7. Add the halved cherry tomatoes, mini pepperoni slices, olive oil, grated Parmesan, fresh basil, salt, and pepper to the thermos.
  8. Gently mix everything together without mashing the tomatoes.
  9. Seal the thermos and let it sit for another 5 minutes to allow flavors to meld.
  10. Open and enjoy your no-heat thermos pasta lunch.

Notes

Preheat the thermos with boiling water before adding pasta to maintain heat. Rinse dry pasta briefly under cold water before soaking to reduce starch and prevent sticking. Add tomatoes and pepperoni after pasta is soaked to keep textures fresh. Season soaking water with a little salt for better flavor. Use a wide-mouth, vacuum-insulated thermos for best heat retention. If thermos heat retention is low, adjust water amount or soak time. For vegetarian or dairy-free versions, swap mini pepperoni with mushrooms or olives and omit or replace Parmesan cheese.
