A simple and festive summer appetizer featuring fresh strawberries, blueberries, and pineapple on skewers, paired with a creamy no-bake vanilla dip. Perfect for Fourth of July BBQs, picnics, and pool parties.

Ingredients

Scale
  • Fresh strawberries, hulled
  • Blueberries, washed and drained
  • Pineapple chunks, fresh or canned in juice, drained
  • Wooden skewers, soaked in water for 30 minutes (optional)
  • 8 ounces cream cheese, softened
  • 1/2 cup Greek yogurt or sour cream
  • 1/4 cup powdered sugar
  • 1 teaspoon pure vanilla extract
  • 1 teaspoon fresh lemon juice (optional)

Instructions

  1. Rinse the strawberries, blueberries, and pineapple thoroughly. Hull the strawberries and slice larger ones in half if needed. Cut pineapple into 1-inch chunks.
  2. In a mixing bowl, combine softened cream cheese and Greek yogurt or sour cream. Beat until smooth and creamy.
  3. Add powdered sugar, vanilla extract, and lemon juice if using. Mix until well combined and smooth.
  4. Thread the fruit onto the skewers in patriotic order: strawberry, pineapple chunk, then blueberries. Repeat until skewer is filled, leaving about an inch at the bottom for holding.
  5. Place the skewers on a platter, cover loosely with plastic wrap, and chill in the refrigerator for 15–20 minutes.
  6. Transfer the creamy no-bake dip to a serving bowl and arrange the fruit skewers around it. Serve chilled.

Notes

Soak wooden skewers in water for 30 minutes if grilling to prevent burning. Chill skewers and dip before serving for best flavor and freshness. Adjust powdered sugar to taste depending on fruit sweetness. For dairy-free version, use coconut yogurt and dairy-free cream cheese alternatives.
