A quick and easy grilled pineapple recipe featuring a sticky cinnamon sugar glaze that caramelizes perfectly, offering a sweet, smoky, and cozy treat perfect for any occasion.

Ingredients

Scale
  • 1 fresh pineapple, peeled, cored, and cut into 1/2-inch thick slices or rings
  • 1/4 cup granulated sugar (can substitute with coconut sugar)
  • 1 tablespoon ground cinnamon
  • 2 tablespoons unsalted butter, melted (or coconut oil for dairy-free)
  • 1 teaspoon vanilla extract (optional)
  • 1 tablespoon fresh lime juice
  • Pinch of salt

Instructions

  1. Prepare the pineapple by peeling, coring, and slicing into 1/2-inch thick rings or wedges.
  2. In a small mixing bowl, whisk together sugar, cinnamon, melted butter, vanilla extract (if using), lime juice, and salt to make the glaze.
  3. Preheat grill to medium-high heat (around 375°F / 190°C).
  4. Place pineapple slices on the grill and cook for 3-4 minutes per side until golden with caramelized edges.
  5. Brush the cinnamon sugar glaze onto the pineapple during the last minute of grilling on each side, allowing it to bubble and caramelize without burning.
  6. Remove pineapple from grill and let rest for about 5 minutes to allow glaze to thicken and soak in.
  7. Serve warm alone or with vanilla ice cream or toasted coconut flakes.

Notes

Use firm, ripe pineapple for best grilling results. Lightly oil grill grates or pineapple to prevent sticking. Brush glaze in the last minutes to avoid burning. Let pineapple rest after grilling to enhance flavor absorption. For dairy-free, substitute butter with coconut oil. Variations include adding spices like cayenne or smoked paprika for heat, or brushing with rum or bourbon for an adult twist.
