A quick and easy summer recipe featuring grilled watermelon cubes with a smoky char, topped with creamy feta and a tangy balsamic reduction for a refreshing and unexpected appetizer.

  • Seedless watermelon, cut into 1-inch thick slices then cubed into 1.5-inch pieces
  • 1 tablespoon extra virgin olive oil
  • Pinch of sea salt
  • Freshly cracked black pepper
  • Crumbled feta cheese (preferably block feta)
  • ½ cup balsamic vinegar (for reduction)
  • Fresh basil or mint, chopped
  • Optional: honey or maple syrup for drizzling
  • Optional: red pepper flakes for heat

Instructions

  1. Slice the watermelon into 1-inch thick slices, then cut into 1.5-inch cubes, aiming for uniform pieces.
  2. Place the watermelon cubes in a mixing bowl. Drizzle with 1 tablespoon of extra virgin olive oil and sprinkle a pinch of sea salt and freshly cracked black pepper. Toss gently to coat all sides without bruising the fruit. Let sit for 5 minutes.
  3. Preheat the grill or grill pan to medium-high heat (around 400°F).
  4. Using tongs, place the watermelon cubes on the grill, spacing them out to avoid steaming. Grill for 2-3 minutes per side until grill marks and slight caramelization appear, keeping the watermelon firm but warmed through (total grilling time about 8-10 minutes).
  5. While grilling, pour ½ cup balsamic vinegar into a small saucepan and simmer over medium-low heat until reduced by half and syrupy, about 10-12 minutes. Stir occasionally and avoid burning.
  6. Arrange the grilled watermelon cubes on a serving platter. Sprinkle crumbled feta generously over the top, then drizzle with the balsamic reduction. Scatter fresh chopped basil or mint leaves on top.
  7. Add a light drizzle of honey or maple syrup and a pinch of red pepper flakes if desired. Serve immediately.

Notes

Use seedless watermelon for easier grilling and no seeds in bites. Pat watermelon dry if too watery for better caramelization. Flip watermelon cubes gently and only once or twice to avoid mushiness. Store leftovers in an airtight container up to 2 days; keep balsamic glaze separate and add before serving for freshness. For dairy-free option, substitute feta with marinated tofu.
