  • 8 ounces linguine or spaghetti pasta
  • 4 cloves garlic, minced
  • 1 large lemon, zest and juice
  • 2 tablespoons chopped parsley

  • 3 tablespoons unsalted butter
  • 2 tablespoons extra virgin olive oil
  • 1/4 teaspoon red pepper flakes (optional)
  • Salt and pepper to taste
  • Freshly grated Parmesan cheese for serving (optional)

Instructions

  1. Bring a large pot of salted water to a boil. Add 8 ounces of linguine and cook according to package instructions until al dente, about 9 minutes. Reserve 1 cup of pasta water before draining.
  2. While the pasta cooks, pat shrimp dry with paper towels and season lightly with salt and pepper.
  3. Heat 2 tablespoons olive oil over medium-high heat in a large skillet. Add minced garlic and sauté for 30 seconds until fragrant but not browned.
  4. Add shrimp in a single layer; cook about 2 minutes per side until pink and opaque. Remove shrimp to a plate and set aside.
  5. Lower heat to medium and add 3 tablespoons unsalted butter to the skillet. Once melted, stir in lemon zest, lemon juice, and red pepper flakes if using. Let sauce bubble gently for 1-2 minutes.
  6. Return shrimp to the pan with the sauce. Add drained pasta and 1/4 cup reserved pasta water. Toss everything together to coat evenly, adding more pasta water if needed to loosen the sauce.
  7. Remove from heat and stir in chopped parsley and basil. Season with additional salt and pepper to taste.
  8. Serve immediately, sprinkled with freshly grated Parmesan cheese and extra herb sprigs if desired.

Do not overcook shrimp to avoid rubbery texture. Use fresh lemon zest and juice for best flavor. Reserve pasta water to loosen sauce. Add herbs at the end to keep flavor bright. For dairy-free, substitute butter with olive oil and skip Parmesan or use dairy-free cheese.
