Instructions

  1. Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper or silicone mats.
  2. In a medium bowl, whisk together flour, baking powder, and salt. Set aside.
  3. In a large bowl, beat softened butter and granulated sugar with an electric mixer on medium speed for 3-4 minutes until light and fluffy.
  4. Beat in eggs one at a time, then stir in lemon zest, lemon juice, and vanilla extract until combined.
  5. Gradually add the flour mixture to the butter mixture, mixing on low speed just until incorporated. Do not overmix.
  6. Scoop dough onto prepared baking sheets about 2 inches apart. Flatten slightly with the bottom of a glass dipped in sugar.
  7. Bake for 10-12 minutes until edges are set but centers are still soft. Cool on baking sheets for a few minutes, then transfer to wire racks to cool completely.
  8. To make frosting, beat cream cheese and softened butter until smooth and creamy. Gradually add powdered sugar, mixing well.
  9. Stir in blueberry preserves, vanilla extract, and lemon juice until swirled and fluffy.
  10. Spread or pipe frosting generously on cooled cookies.
  11. Serve immediately or refrigerate. Cookies keep well refrigerated for up to 4 days.

If dough is too soft to shape, chill in fridge for 20 minutes before scooping. Use softened cream cheese and butter for smooth frosting. Check cookies at 10 minutes to avoid overbaking.
