  • 1 jalapeño, finely chopped (optional, seeds removed for milder flavor)
  • 2 tablespoons freshly squeezed lime juice
  • 2 tablespoons olive oil
  • 1 teaspoon ground cumin (lightly toasted if desired)
  • 1/2 teaspoon salt (adjust to taste)
  • 1/4 teaspoon freshly cracked black pepper
  • Optional: diced avocado for creaminess
  • Optional: splash of apple cider vinegar for extra tang

Instructions

  1. Rinse and drain the black beans thoroughly. Use fresh or thawed corn kernels.
  2. Dice the red bell pepper into small, even pieces, halve the cherry tomatoes, thinly slice the green onions, and chop the cilantro finely.
  3. If using jalapeño, deseed and finely chop it to control the heat.
  4. In a small bowl, whisk together lime juice, olive oil, ground cumin, salt, and black pepper. Add apple cider vinegar if desired.
  5. In a large mixing bowl, gently toss the black beans, corn, tomatoes, bell pepper, green onions, jalapeño, and cilantro.
  6. Pour the dressing over the ingredients and fold gently to coat evenly without mashing.
  7. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes to let flavors meld.
  8. Before serving, stir gently and adjust seasoning with more salt, pepper, or lime juice if needed.
