Fresh Honey Peach Burrata Salad with Prosciutto

A quick and easy summer salad combining juicy peaches, creamy burrata, salty prosciutto, and a honey-lemon dressing for a fresh and indulgent meal.

  • 23 medium ripe but firm fresh peaches, sliced
  • 1 ball (about 8 ounces) burrata cheese
  • 46 thin slices prosciutto
  • 4 cups baby arugula or mixed greens
  • 2 tablespoons honey
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon fresh lemon juice
  • Salt and freshly ground black pepper, to taste
  • Optional: toasted pine nuts or chopped fresh basil

Instructions

  1. Rinse and pat dry peaches. Slice into thin wedges about 1/4 inch thick.
  2. Rinse and dry baby arugula or mixed greens and place in a large bowl.
  3. Whisk together extra virgin olive oil, honey, fresh lemon juice, salt, and pepper in a small bowl or jar.
  4. Drizzle about half the dressing over the greens and toss gently to coat evenly.
  5. Arrange dressed greens on a serving platter or individual plates. Lay peach slices on top.
  6. Tear or fold prosciutto slices over the salad.
  7. Tear burrata into large chunks and place across the salad.
  8. Drizzle remaining honey-olive oil dressing over the salad. Sprinkle with freshly ground black pepper and flaky sea salt. Optionally, scatter toasted pine nuts or fresh basil on top.
  9. Serve immediately to enjoy the contrast of warm peaches and cool cheese.

Notes

Use peaches that yield slightly to gentle pressure but are not overly soft. Tear burrata instead of slicing to preserve creamy texture. Avoid overdressing the salad to keep greens fresh. Optionally grill peaches for a warm variation. Store components separately if making ahead and assemble just before serving.
