A fresh and festive appetizer combining cherry tomatoes, fresh blueberries, mozzarella balls, and basil leaves, drizzled with balsamic glaze and olive oil. Perfect for summer gatherings and patriotic parties.

  • 1 cup (150g) cherry tomatoes, washed and dried
  • 1 cup (150g) fresh blueberries, washed and patted dry
  • 8 ounces (225g) fresh mozzarella balls (bocconcini or ciliegine)
  • About 20 fresh basil leaves, whole
  • Balsamic glaze for drizzling
  • Extra virgin olive oil, for drizzling
  • Salt, to taste
  • Freshly ground black pepper, to taste
  • About 20 skewers or toothpicks

Instructions

  1. Rinse and dry the cherry tomatoes and fresh blueberries thoroughly. Drain the mozzarella balls and pat dry gently with paper towels. Pick whole basil leaves, discarding any bruised or torn ones.
  2. Thread one cherry tomato onto a skewer, followed by a basil leaf folded in half, then a mozzarella ball, and finally a blueberry. Repeat this pattern for each skewer.
  3. Lay the skewers flat in a single layer on a serving platter, arranging colors to alternate and look balanced.
  4. Lightly sprinkle salt and freshly ground black pepper over the skewers. Drizzle with extra virgin olive oil, then finish with a generous drizzle of balsamic glaze. Garnish with extra basil leaves if desired.
  5. Serve immediately or cover and refrigerate for up to 2 hours before serving. Bring to room temperature for 10 minutes before serving.

Notes

Use fresh blueberries instead of frozen to avoid sogginess. Dry all ingredients well before assembling. Add balsamic glaze just before serving to keep skewers fresh. For vegan version, substitute mozzarella with firm tofu cubes or vegan cheese. Handle blueberries gently to avoid bursting. Best served fresh or within 2 hours refrigerated.
