  • 1 tablespoon fresh lemon juice

  • Seeds from 1 vanilla bean pod or 1 teaspoon pure vanilla extract
  • 1 1/4 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 6 tablespoons cold unsalted butter, cubed
  • 3/4 cup whole milk

Instructions

  1. Peel and slice peaches into 1/2-inch slices. Toss with granulated sugar, brown sugar, and lemon juice. Let sit for 10-15 minutes to macerate.
  2. Preheat oven to 375°F (190°C).
  3. In a medium bowl, whisk together flour, baking powder, cardamom, and salt. Cut in cold butter until mixture resembles coarse crumbs with some pea-sized bits.
  4. Scrape seeds from vanilla bean and add to the flour mixture along with milk. Stir gently until just combined; do not overmix.
  5. Pour peach mixture with juices into a greased 9×9 inch baking dish. Drop spoonfuls of biscuit dough evenly over the peaches.
  6. Bake for 35-40 minutes until biscuit topping is golden brown and peach juices are bubbling. Tent with foil if topping browns too quickly.
  7. Cool on a rack for 15 minutes before serving. Serve warm with vanilla ice cream or whipped cream.

If peach filling is too liquidy, sprinkle 1 tablespoon cornstarch over peaches before baking to thicken. Keep butter cold for flaky biscuits and avoid overmixing dough.
