  • 4 cups (about 600 grams) fresh watermelon, cut into bite-sized cubes
  • 1 cup (about 150 grams) feta cheese, cut into cubes or crumbled
  • 1 to 2 fresh jalapeños, thinly sliced (seeds removed for milder heat)
  • 3 tablespoons raw honey
  • 2 tablespoons fresh lime juice (about 1 lime)
  • 1 teaspoon fresh lime zest (optional)
  • Pinch of sea salt
  • Small wooden skewers or toothpicks (soaked in water for 10 minutes if grilling)

Instructions

  1. Cut seedless watermelon into roughly 1-inch cubes, aiming for even sizes.
  2. Cube or crumble the feta cheese into similar-sized pieces as the watermelon.
  3. Thinly slice 1 to 2 jalapeños, removing seeds if a milder flavor is desired.
  4. In a small bowl, whisk together raw honey, fresh lime juice, sea salt, and optional lime zest until smooth and pourable.
  5. Thread a cube of watermelon, followed by a piece of feta, then a slice of jalapeño onto each skewer. Repeat once or twice if skewers are long enough.
  6. Arrange skewers on a platter and drizzle the honey lime mixture evenly over them just before serving.
  7. Optional: Chill skewers in the refrigerator for 10–15 minutes before serving for extra refreshment and flavor melding.

Notes

Soak wooden skewers in water for 10 minutes if grilling to prevent burning. Remove jalapeño seeds for milder heat. The honey lime drizzle can be made ahead and stored in the fridge; bring to room temperature before use. Pat watermelon dry if too watery to avoid soggy feta. Optional grilling adds a smoky flavor but be careful not to overcook.
