A quick and easy parfait combining creamy full-fat Greek yogurt, fresh mixed berries, and crunchy honey granola, perfect for breakfast or a healthy snack.

Ingredients

  • 2 cups plain full-fat Greek yogurt
  • 1 cup fresh blueberries
  • 1 cup fresh raspberries
  • 1 cup fresh strawberries, hulled and sliced
  • 4 tablespoons honey granola (homemade or store-bought)
  • 1 tablespoon honey
  • 1 teaspoon lemon zest (optional)
  • A few drops vanilla extract (optional)
  • 1 teaspoon chia seeds (optional)

Instructions

  1. Rinse 1 cup each of blueberries, raspberries, and sliced strawberries under cold water. Pat dry and toss with lemon zest and vanilla extract. Set aside.
  2. In a separate bowl, spoon 2 cups of plain Greek yogurt. Drizzle 1 tablespoon honey over it and whisk gently until combined.
  3. Layer the parfait by spooning a few tablespoons of honey-sweetened yogurt into the bottom of a glass or jar. Add 1/4 cup mixed berries, then 2 tablespoons honey granola. Repeat layers until nearly full, finishing with granola and berries on top.
  4. Sprinkle 1 teaspoon chia seeds on top and drizzle an extra 1/2 teaspoon honey if desired.
  5. Serve immediately or refrigerate up to 2 hours. Add granola just before serving to maintain crunch.

Keep granola separate until serving to maintain crunch. Use full-fat Greek yogurt for best creaminess. Fresh berries should be drained well to avoid soggy layers. Yogurt and berries can be prepped the night before; assemble just before eating.
